Satoshi Katakura joinS Chef Billy Cotter for THE FOURTH YEAR IN A ROW
FOR A COLLABORATIVE series of 5-COURSE Omakase Dinners

We are delighted to welcome Satoshi Katakura back to Durham to bring you a memorable evening of culinary collaboration in the izakaya. Each year, we are lucky to have Satoshi travel to Durham to collaborate with Billy for a unique omakase dinner series. Dashi's ownership first met Satoshi in 2014 at his izakaya in Tokyo, Hiro, where he crafts dishes with the freshest ingredients centered around the bounty of Japanese seafood. Since that first visit, Satoshi has joined Chef Billy Cotter for omakase dinners at Dashi in 2016, 2017, and 2018. Dashi's team has also worked in the kitchen at Hiro during their 2017 trip to Tokyo! Each year this omakase series sparks new and exciting dishes featuring the freshest NC ingredients. Don’t wait to reserve your table!

THE COLLABORATION CONTINUES

Dashi ownership first met Satoshi Katakura at Hiro in Tokyo during a trip in 2014.  In 2016, Dashi invited Satoshi for a week of omakase dinners in the upstairs izakaya.  This sold out series featured a unique collaboration with Billy Cotter and Satoshi bringing their visions together.  In 2017 the Dashi team went to Tokyo to worked with Satoshi in his kitchen at Hiro, with Satoshi joining us again in Durham later that year. In 2018, Satoshi joined us again in September for an omakase series & toured a couple farms in the area. Now, we welcome Satoshi back as the collaboration continues for another special series of omakase dinners. We hope you can join us!
