We're so excited to welcome Chef Satoshi Katakura, owner of Hiro in Tokyo's Nakameguro neighborhood, back to Durham for another Chef Collaboration Omakase!

What started as a memorable meal when we first met Satoshi at Hiro in 2014 has grown into a friendship and creative partnership that spans more than a decade. After his first visit to Dashi in 2016, we've continued cooking together in both Tokyo and Durham, exploring local farms and markets, sharing techniques, and learning from one another along the way.

Every time Satoshi visits, guests can experience an entirely new five-course menu inspired by Japanese tradition, seasonal ingredients, and the ideas we've discovered together. No two omakase dinners have ever been the same, and that's what keeps this collaboration so special.

ABOUT THE OMAKASE DINING EXPERIENCE

In an izakaya, (Japanese pub), ordering omakase entrusts your order to the chef - it is essentially a chef’s tasting menu.  Chef Tony Zirpolo and Satoshi Katakura will send out the freshest and most delicious dishes of the day.  Dining omakase is a way for Dashi to showcase our finest ingredients and techniques! This dinner is hosted in our upstairs izakaya and is offered by reservation only. Please read the FAQ below for more information about this special event!

 

IT ALL STARTED IN TOKYO IN 2014 WITH A GIFT OF MOONSHINE…

We first met Chef Satoshi Katakura at his izakaya, Hiro, in Tokyo's Nakameguro neighborhood during a trip to Japan in 2014. What started as one memorable meal quickly grew into a friendship that has become one of Dashi's favorite traditions.

In 2016, we invited Satoshi to Durham for his first collaborative omakase series. Since then, we've cooked together in both Durham and Tokyo, explored Triangle farms and local markets, shared techniques and ideas, and welcomed Satoshi back year after year. After visits in 2017, 2018, 2019, 2022, 2023, and 2024, we're thrilled to continue the tradition once again in 2026.
