It feels like a good day to make a cake & eat it too 🍰 πŸŽ‰ We're dreaming about our Green Tea Pound Cake with Miso Caramel ice cream courtesy of The Parlour.

Ingredients 

  • 2 cup sifted all-purpose flour 

  • 1/2 cup matcha powder 

  • 1.5 tsp baking powder 

  • 1/2 tsp salt 

  • 1 cup butter 

  • 2 cup sugar 

  • 4 eggs 

  • 1 tsp vanilla extract 

  • 1 cup whole milk 

  • Zest of 1 lemon  

Instructions 

  1. Preheat oven to 250 degrees 

  2. Cream butter & sugar with a paddle until very fluffy 

  3. Incrementally mix in eggs, lemon zest, & vanilla, followed by matcha powder, baking powder & salt, & then milk, whipping until fluffy after each addition 

  4. Add flour to mix, fold with a spatula by hand until smooth & uniform 

  5. Pour into oiled cake pan 

  6. Bake at 250 degrees for about 2.5 hours – check after 2 hours!  

  7. Test cake doneness with skewer – when it comes out clean, the top is golden brown, & the cake feels β€œspringy,” remove from oven. 

  8. Flip cakes onto parchment-lined tray 

  9. Sift powdered sugar on top if desired & add scoop of ice cream 

  10. Enjoy!
