Waygu Beef Burger

If you’re looking to impress your friends (from a distance), whip up these delectable Waygu beef burgers, topped with miso-cured cucumbers & radishes, Japanese BBQ, garlic scape mayo, tomato, pea shoots, cheddar & of course, smoked pork belly, served on a brioche bun with a side of taro chips! Source many of these toppings form Li Ming’s Global Mart!

Ingredients:

  • Waygu beef

  • Hickory smoked bacon slices

  • Brioche Bun

  • Cheddar Cheese

  • 1 package Persian cucumbers

  • Sliced radishes

  • White miso

  • Pea Shoots

  • Tomato

  • Garlic Scape Kewpie Mayo

  • Japanese BBQ Sauce

  • 1 pound taro root

  • Togarashi

Instructions:

Burger:

  1. Sear 6oz Waygu patty to desired doneness

  2. Cook bacon

  3. Toast brioche bun with butter

  4. Assemble burger with bacon, cheese, cucumbers, radishes, BBQ sauce, garlic scape Kewpie mayo, tomato, and pea shoots on brioche bun. Enjoy!

Taro chips:

  1. Thinly slice 1 pound taro root into chips

  2. Put in hot water (as hot as your hands can handle)

  3. Shake out water and fry in vegetable oil at 350 degrees until golden brown

  4. Sprinkle togarashi on top

  5. Salt to taste

Cucumbers and radishes:

Ratio: 1 package cucumbers: 1/4 cup white miso

  1. Cure cucumbers whole with miso to for 2 days

  2. Take out and rinse

  3. Slice & serve

This year looks a lot different from last year (when we were frying fish whole for your table to devour), but whole fried fish tastes just as delicious as it did last year with a little squeeze of lemon 🍋 #shoplocal 👉 Locals Seafood 🎣  

Ingredients:

  • 1.5-2 pound whole porgy fish (substitute snapper) 

  • Lemon wedges

  • Togarashi (source form Li Ming’s Global Mart)

  • Sea salt

  • Scallion and Thai chili soy sauce

Instructions

Fish:

  1. Slice 3x across the fish

  2. Dredge in potato and cornstarch, ratio: 1:1

  3. Fry in vegetable oil at 350 degrees for 10-12 minutes

Scallion and Thai chili soy sauce:

Mix together:

  • 1/2 cup soy sauce

  • 1/4 cup chopped scallions

  • 1 tsp (1 whole) chopped Thai chili

  • 1 tbsp sugar

Serve:

Serve fish alongside sea salt, togarashi, lemon wedges, & sauce. Enjoy!

Roasted New Potatoes with Crème Fraîche & Salmon Caviar

This roasted new potatoes with salmon caviar and crème fraîche recipe is good any time of the year – it’s comforting, fresh, and all around tasty. You really can’t go wrong with all the delicious ingredients in this dish. 

Ingredients: 

  • 1 pound red new potatoes or fingerlings

  • 1 oz salmon caviar 

  • 1 tub crème fraîche or sour cream

  • 1 cup soy sauce

  • 1/4 cup butter

  • Garnish: pea shoots and garlic scapes (or substitute scallions!)

Instructions:

  1. Potatoes:

    1. Roast potatoes in oven with oil and salt at 350 degrees for 15-20 minutes

    2. Cool and set aside

  2. Brown butter soy sauce:

    1. Brown 1/4 cup butter in pan

    2. Add 1 cup soy sauce

  3. Combine potatoes, sauce, and garlic scapes (or scallions) in a saute pan until they come to a boil. Reduce heat and a simmer for 1 minute.

  4. Assemble bowl with potatoes and sauce, add a dollop of crème fraîche and salmon caviar

  5. Yum!

  1. Clean one pound of smelt – source from Locals Seafood

  2. Mix 1/2 cup fish sauce, 2 tbsp water, 1 tbsp soy sauce & 4 tbsp sugar

  3. Marinate fish in mixture for 30 minutes

  4. Dredge fish in rice flour & fry in pan over medium heat for 2 minutes or until golden brown

  5. Serve garnished with cilantro & lime wedges

  1. Create marinade: mix 1/3 cup soy sauce, 1/3 cup mirin, 2 1/2 tbsp sugar, 1/4 cup rice vinegar

  2. Pan fry eggplants whole until soft inside

  3. Add eggplants to a bowl with the marinade & add 1 tsp minced garlic, 1 tsp minced ginger, & 1 to 2 hot chilies sliced

  4. Serve with thinly sliced leeks on top

  1. Crush 2 cups roasted white sesame seeds in food processor

  2. Mix in 1 cup soy sauce, ¼ cup mirin, ¼ cup sake, ½ cup sugar, 1 tbsp sesame paste. (*Substitute water for mirin & sake if needed)

  3. Enjoy!

Pancakes are a morning family unifier & our #DashiAtHome savory pancake recipes are perfect for a simple dinner dish to make with the family – try scallion, kimchi, or any shredded vegetable & get to flipping those pancakes! 🥞

Ingredients:

  • 4 cups kimchi  (source from Li Ming’s Global Mart)

  • 3/4 cup kimchi juice (key for flavor & color!)

  • 4 tbsp chopped scallion 

  • 2 tsp salt

  • 2 tsp sugar

  • 2 cups flour

  • 1 cup water

*In place of the kimchi, use scallions or shredded/ julienned vegetables that have been sauted & seasoned with soy sauce. When adding to pancake mixture, adjust moisture content with water as necessary.

Optional pancake sauce:

  • 1/2 cup sesame oil

  • 1/2 cup rice white vinegar

  • 1/2 soy sauce 

Instructions:

  1. Mix ingredients together to form a batter that pours easily from a ladle.

  2. Heat 1 tbsp oil in a pan on medium heat

  3. Pour batter in pan in desired pancake size

  4. Cook pancakes around 2-3 minutes on each side, until golden brown & crispy

  5. Top with sauce & enjoy!

One of the most popular Japanese street foods meets a Southern classic in our Takoyaki Hushpuppies – a fried "octopus ball" topped with tangy BBQ sauce.  

Instructions: 

  1. Preheat: Preheat 2 inches of oil deep fryer or deep skillet to 365 degrees 

  2. Mix: Combine dry ingredients in bowl, adding in chopped and then wet ingredients. 

  3. Cook: Drop batter by the tablespoon into hot oil, let cook until golden brown, about 2-3 minutes. Remove with strainer, drain on paper towels. 

  4. Enjoy!  

Ingredients: 

Dry:  

1 cup self-rising flour 

3/4 cup all-purpose flour  

1 cup cornmeal 

1/2 tsp salt 

3/4 tsp sugar 

3/4 tsp of baking soda 

3/4 tsp baking powder 

Chopped:  

1/8 cup diced onion 

1 tbsp chopped scallion 

1 tbsp if pickled ginger 

2 cups chopped octopus 

Wet:  

3/4 cup whole milk 

1/3 cup buttermilk 

1 tbsp soy sauce 

1 egg

Our #DashiAtHome miso-marinated fish is best grilled over charcoal. 

  1. Source your fish – swordfish, tuna, or even salmon – from Locals Seafood.  

  2. The day before, slather fish with white miso. Put between paper to rest. 

  3. When ready to grill, wipe off miso, toss on the flame, & cook to your preferred doneness.

In Japanese, “yaki” means grilled or fired, and these small vegetable and meat skewers are a summertime favorite. For a more traditional flavor, cook over a charcoal grill – shrimp, snap peas, mushrooms, brussel sprouts, okra, cauliflower, broccoli, or any meat & vegetable works! 

  1. Skewer choice meats & vegetables on small skewers  

  2. Dip each skewer in tare sauce, place on grill. Continue to brush skewers with tare throughout cooking process.

  3. Grill until desired doneness.  

  4. Top with chopped scallions & sesame dressing 

Tare recipe: 

Combine 1/4 cup sake, 1/4 cup mirin, 1/2 cup soy sauce.  

*substitute water for sake/ mirin

It feels like a good day to make a cake & eat it too 🍰 🎉 We're dreaming about our Green Tea Pound Cake with Miso Caramel ice cream courtesy of The Parlour.

Ingredients 

  • 2 cup sifted all-purpose flour 

  • 1/2 cup matcha powder 

  • 1.5 tsp baking powder 

  • 1/2 tsp salt 

  • 1 cup butter 

  • 2 cup sugar 

  • 4 eggs 

  • 1 tsp vanilla extract 

  • 1 cup whole milk 

  • Zest of 1 lemon  

Instructions 

  1. Preheat oven to 250 degrees 

  2. Cream butter & sugar with a paddle until very fluffy 

  3. Incrementally mix in eggs, lemon zest, & vanilla, followed by matcha powder, baking powder & salt, & then milk, whipping until fluffy after each addition 

  4. Add flour to mix, fold with a spatula by hand until smooth & uniform 

  5. Pour into oiled cake pan 

  6. Bake at 250 degrees for about 2.5 hours – check after 2 hours!  

  7. Test cake doneness with skewer – when it comes out clean, the top is golden brown, & the cake feels “springy,” remove from oven. 

  8. Flip cakes onto parchment-lined tray 

  9. Sift powdered sugar on top if desired & add scoop of ice cream 

  10. Enjoy!

Craving a spicy & salty snack? Our Dashi At Home spicy boiled peanuts recipe melds a Southern favorite with Japanese flavors – cook traditionally or fast-track with an instant pot!

  1. Soak 1.5 pounds of raw peanuts in the shell overnight

  2. Place peanuts in pot, add 1/3 cup salt, 1 cup soy sauce, 2 scallions, 2 chilies or 2 tbsp red pepper flakes

  3. Add 12 cups water to cover peanuts

  4. Weigh down peanuts to ensure they're fully submerged (use a plate or pot lid, or the steamer rack for the Instant Pot)

  5. Simmer for 6-8 hours or pressure cook for 75 minutes & natural pressure release for 30 minutes

  6. Top with chopped scallions & chili flakes & go nuts!

Wondering what to do with your fresh, spring veggies? We’ve got the answer: Quick Pickle! This recipe works for any produce – cucumbers, asparagus, carrots, onions, squash or even cherry tomatoes. We personally love: persimmon, daikon & okra. 

  1. Cut vegetables into small spears or rounds 

  2. Add desired spices – coriander, peppercorn, garlic, fresh herbs 

  3. Add equal parts water & vinegar – any basic vinegar works, such as white, apple cider, rice 

  4. For every cup of vinegar, add 1 tablespoon of both salt & sugar 

  5. Combine ingredients in jar, leaving 1/2 inch at the top 

  6. Let it pickle for 48 hours

  1. Place egg in boiling water for 6 minutes 

  2. Remove egg, let sit in ice water bath 

  3. Peel cooled eggs 

  4. Marinate eggs in soy sauce for 2 hours
